Zhangzhou lu mian combines springy alkaline wheat noodles with a lightly thickened savoury broth. The official recipe cooks the noodles separately, drains them and coats them with a little oil. The broth starts from pork stock and gains flavour from dried shrimp, dried squid and other dried seafood, together with bamboo shoot and shiitake. Starch thickens the liquid before beaten duck egg is stirred through it, producing delicate strands within the gravy.

The noodles and bean sprouts are warmed for each bowl, then covered with the prepared broth and finished with garlic, garlic vinegar, coriander and pepper. The result should be slippery and glossy, with the sauce surrounding the noodles.
