Zheng'an Steamed Rice Sheets (正安米皮) are thin sheets of steamed rice batter from Zheng'an county (正安县) in Zunyi (遵义), Guizhou, served hot in a sauce.
How it is made
The Zheng'an county government, which calls the snack Zheng'an zheng mipi (正安蒸米皮), steamed rice sheets, gives the original method: rice is soaked for more than six hours, ground into a batter on a stone mill and steamed, and the cooked sheet is then finished with toppings.
Flavour and texture
The county singles out the sheet as thin yet springy, the quality it says sets it apart among Zheng'an's snacks. The sheets come to the table steaming and wrapped in their sauce, and the county describes the smell of meat mixed with the fresh aroma of egg, spring onion and soybeans.
Where it comes from
Shops selling steamed rice sheets fill Zheng'an's streets and lanes, which the county takes as a sign of how fond local people are of them. On a five-stop food route published by the county, the sheets are the second stop, after Zheng'an numbing-pepper chicken (椒麻鸡) and ahead of oil tea (油茶), square bamboo shoots (方竹笋) and beef shaola (牛肉烧腊). The county points visitors to the East Gate snack street (东门小吃街) in the county town and suggests eating a bowl on the street while watching people come and go.
