Luoji Rice Dumplings (洛基粽子) are a Danzhou (儋州) preparation made with glutinous rice, locally produced egg yolks, pork belly and homemade seasonings. Hainan Provincial Government’s food guide identifies them with Luoji (洛基), while Hainan Normal University (海南师范大学) names Lizha village (力乍村) as their birthplace.
How it is made
Rice, yolk and pork belly are combined with the maker’s own seasonings, following an older method without commercially sold spices. The parcels are then cooked through.
Flavour and texture
The desired texture is sticky rice that has not turned mushy, with tender, fragrant meat. Pork fat gives richness without a greasy finish, and the flavour balances saltiness and sweetness.
Where it comes from
Luoji dumplings appear in a traditional Danzhou folk song naming local foods. Hainan Normal University documented international students learning to wrap them with Lizha residents and taking part in a dumpling-making contest ahead of the Dragon Boat Festival.
