Xunxian Pebble-Baked Stuffed Bread (浚县子馍) is a specialty snack of Xunxian (浚县) county in Hebi (鹤壁), Henan: a flatbread filled with shredded pork and egg and baked on scorching-hot cobblestones.
How it is made
The Xunxian county government sets out the method in three steps. Top-grade flour is worked with oil and chopped spring onion into a flatbread, a huoshao (火烧). Shredded pork is then added and the bread goes onto pebbles heated until they are scorching hot, where it bakes through. Last of all, egg is poured in and baked until it sets.
Flavour and texture
The flatbread is flaky, salty and fragrant. Inside, the egg and the fine shreds of pork stay tender and smooth, and the county government sums the whole thing up as crisp outside and tender inside.
Where it comes from
The bread is also called Shizi Mo (石子馍), literally pebble bread, a name that comes from baking it on cobblestones. The county government gives Xunxian Pebble-Baked Stuffed Bread a history of more than a thousand years.
