Shangshui Guqiang Hot Tofu (商水固墙热豆腐) is fresh bean curd from Guqiang (固墙镇), a town in Shangshui County (商水县) of Zhoukou (周口), Henan. It is eaten while still hot, topped with a chilli sauce. The Zhoukou Daily (周口日报) headlines it as a famous food of the Central Plains (中原名吃).
How it is made
According to the tofu makers quoted by the Zhoukou Daily, the key is how the soy milk is set: no gypsum is used, only clear whey (清浆). The paper describes the result as fine-textured, fresh, tender and soft.
How it is eaten
Local people say it must be eaten hot, with a specially made chilli sauce poured over it. The Zhoukou Daily lists the sauce's main ingredients as chilli, sesame oil, salt, MSG, Chinese toon leaves (香椿叶), toasted peanuts, toasted sesame seeds and ginger.
Where it comes from
The Zhoukou Daily reports that in 1997, when Premier Zhu Rongji (朱镕基) inspected Zhoukou, Guqiang hot tofu was chosen as a featured dish for the banquet. On 20 November 2009 the county held a food festival in Guqiang for the tofu and for Guqiang lao mian noodles (固墙捞面), with demonstrations by local cooks.
