Fenghuang Ginger Candy (凤凰姜糖) is a crisp confection with sweetness and a ginger bite. The Fenghuang County procuratorate identifies local small yellow ginger and a distinctive pulling process as features of the candy made in Fenghuang (凤凰).

How it is made

Rednet describes heating ginger, brown sugar and water in an iron wok until the mixture becomes sticky. It is poured onto a bluestone worktop to cool. Once cool enough to pull into strands, the mass is hung on an iron hook beside the door and stretched quickly into strips. Scissors cut these into thumb-sized triangles.
