Changbai Mountain Delicacies Banquet (长白山珍宴) is a set banquet made from the produce of Changbai Mountain (长白山), served in Baishan (白山), Jilin. China Jilin Net, the Jilin Daily group's news site, lists ginseng, deer antler, bear, hazel grouse (飞龙), snow frog (雪蛤) and matsutake among the several dozen prized ingredients, and describes the whole as a high-class banquet meant to be both a treat and a tonic.

How the banquet is laid out

In the classic form described by China Jilin Net, the table has a large decorative centrepiece, small plates, a cold platter of four colours and eight kinds, six hot dishes and two pastries. The centrepiece, 'Golden Deer and Plum Blossom' (金鹿梅花), is venison modelled into a running sika deer, framed by matsutake, white fungus and bracken to suggest a forest in spring.

The six hot dishes come in sequence. First comes hazel grouse poached in top stock with greens and ham, then a whole braised bear paw garnished with orchid shapes of egg white and chicken breast. The third dish combines deer antler slices with pheasant, quail eggs and minced chicken, and the fourth is lion's mane mushroom with ham, dried scallop and chicken stock. The fifth is ginseng steamed with soft-shelled turtle. The last, named after Tianchi (天池), is a sweet, brightly coloured dish of snow frog cooked with chicken fat, watermelon flesh and rock sugar.

In Baishan today

In a 2025 study-tour route, the Jilin Department of Culture and Tourism recommends a Changbai Mountain banquet at the Wanda Changbai Mountain International Resort (万达长白山国际度假区): matsutake stewed with farm chicken, venison with king oyster mushrooms and eggs fried with Siberian ginseng (刺五加), for the natural flavour of forest ingredients. On 16 May 2023, ten teams in the final of the second Jiangyuan District (江源区) cooking contest for Changbai Mountain ingredients, run with the Baishan trade union, showed off the banquet with dishes such as a finely cut 'white jade peacock', fried wild-vegetable rolls and ginseng baked with fresh milk.
