Hengchun Hulled Mung Bean Dessert (恒春绿豆蒜) is a sweet made from hulled mung beans, known locally as lüdou suan (绿豆蒜, literally "mung bean garlic") and also written lüdou zhuan (绿豆馔). Chinese Wikipedia lists it among the traditional snacks of Hengchun Township (恒春镇) in Pingtung County (屏东县), Taiwan.
How it is made
Chinese Wikipedia describes the Taiwanese sweet as mung beans with their skins removed, cooked with white sugar and longan (桂圆) as supporting ingredients. It compares it with dou shuang (豆爽), a Teochew (潮汕) snack of hulled mung beans cooked to a thick soup and eaten with coconut milk and youtiao (油条, fried dough sticks), which is popular in Malaysia and Singapore.
How it is eaten
A 2023 CTS News (华视新闻) report from Pingtung describes visitors eating it on Checheng Old Street (车城老街) and in Hengchun, where it counts as a local speciality and several shops in Checheng sell it. It describes a thick, smooth sweet topped with extra mung beans, sugar syrup and shaved ice. Customers can also add fentiao (粉条, starch noodles) for a mixed bowl, and every shop makes its sugar syrup differently.
