Whipped Shaved Ice (泡泡冰) combines shaved ice and toppings into a fine, closely mixed dessert. It is associated with Keelung (基隆), particularly the Miaokou market (庙口).
How it is made
The traditional method starts with ice and toppings in a bowl. A spoon is used to work them together by hand until the ice becomes fine and even. The toppings are mixed through the ice, producing a dense texture between ice cream and slush. Chinese Wikipedia also describes suppliers preparing finely blended bases by machine for shops to finish.
Where it comes from
Chinese Wikipedia credits college students with renewing interest in the dessert at Keelung Miaokou. Students pooled money to rent a stall and worked to pay their tuition, helping the snack regain its following. A separate naming tradition compares the spoon-stirring motion to mixing milk, giving rise to the name paopaobing.
