Fish Cake (鱼饼) is a snack from Wenzhou (温州), made with minced sea fish. The district government of Ouhai (瓯海) describes a tender cake whose preparation can include tofu, vegetable paste and sweet-potato starch.

Preparing the fish cake

In the preparation described by Ouhai, fish flesh is scraped off and minced, then mixed with wine, tofu, vegetable paste, scallion, ginger and sweet-potato starch. The mixture is kneaded and shaped into cakes. These may be steamed, or fried until golden and then braised.

Ouhai also provides a numbered recipe in which the minced fish mixture is worked by hand for eight to ten minutes until sticky and resilient. It is shaped into long or oval cakes, steamed over high heat for twelve to fourteen minutes, cooled, and then pan-fried until golden on both sides.

Ways to serve it

The fried cakes are drained and sliced for the plate. Soy sauce and vinegar can accompany them as a dip. Fish cake also goes into other dishes: it can be cut into fine strips for stir-frying or added to soup.
