About Anchang Ancient Town
Watercourses and bridges structure the old town, with dark tiled roofs and covered passages along its streets. The sound of oars and the smell of fermenting soy sauce are part of the scene recorded by visitors to the working town. Renchang Sauce Garden, south of Shuige Bridge, gives this waterside setting a specific link to Shaoxing's food culture.
Founded in the late Qing period, Renchang retains historic brewing equipment, including a wooden press, as well as an open-air yard of fermentation vats. Its craft depends on fermentation and exposure to the sun, with the contents of the vats regularly turned by workers.
