Huaguoshan Wind-Cured Goose (花果山风鹅) is a cured goose sold as a speciality of the Huaguoshan (花果山) area of Lianyungang (连云港) in northern Jiangsu, the mountain the Lianyungang city portal calls the home of the Monkey King, Sun Wukong (孙悟空).

How it is made

The Lianyungang city portal describes the goose as made on a traditional recipe from meat geese of the Yihetang (沂河淌) pasture, which it calls the largest natural, pollution-free pasture in Jiangsu. The geese are steeped with more than thirty Chinese medicinal herbs and finished with modern technology through sixty-three processing steps.

Flavour and texture

The finished goose has thin skin, tender meat and the pleasant aroma of cured meat (腊香).

Where it comes from

The city portal gives Huaguoshan Wind-Cured Goose more than three thousand years of history and repeats a legend that it was first made in secret by Yin (尹), a chancellor of the Shang dynasty whom it calls the founding father of Chinese cooking, while he lived in seclusion at the foot of Huaguoshan. The portal also calls the goose the first green brand of China's goose industry.

How it is eaten

The goose is presented as an accompaniment at meals, and as a present to take to friends and relatives.
