Ganyu Griddle Pancakes (赣榆煎饼) are griddle pancakes from Ganyu District (赣榆区) in Lianyungang (连云港), one of the parts of northern Jiangsu where pancakes are eaten as a staple food.
How it is made
Ganyu Griddle Pancakes belong to the same family as the pancakes of Shandong and the rest of northern Jiangsu, but the Ganyu version differs in its ingredients, the heat it is cooked over and the way it is eaten. The batter is wheat batter, wheat flour, soybean flour, corn flour or sweet-potato flour, or several of these mixed together. It is spread by hand over a slow fire on an aozi (鏊子), the round, flat iron plate on which this kind of pancake is cooked.
Flavour and texture
The finished pancake is golden, tough and chewy enough to need real work from the jaw, which is why people from southern China nicknamed it the "head-shaking cake" (摇头饼).
How it is eaten
The pancake is rolled around a filling. The ways local people like best are fried dough sticks (油条) with cold starch jelly (凉粉), best with chilli powder and chive flower (韭菜花); spring onion with dried shrimp; and dried fish. Because the pancakes keep well and are easy to carry, people in Ganyu take a stack with them when they travel or go away to work.
