Ninghai Wheat Flatbread (宁海麦饼) is a wheat-flour bread associated with Qiantong (前童) in Ninghai (宁海). A 2021 Guangming Daily (光明日报) feature, republished by CNR (央广网), describes careful kneading as the key to its fine texture and resilience.

Plain and filled forms

The unfilled form is called dan maibing (淡麦饼), or plain flatbread. It can be rolled around fried sesame and seaweed or fried dough sticks. Filled forms include meat, egg and dried shrimp versions, as well as a sweet flatbread with sugar. Guangming Daily also describes the bread as convenient to carry and formerly used as food for journeys.

A recognised local craft

Ninghai included maibing making in its sixth county intangible-cultural-heritage list in June 2020, naming the Ninghai Maibing Trade Association (宁海县麦饼行业协会) as the protecting body. By the 2021 newspaper feature, three competitions initiated by Qiantong had selected thirty maibing masters from across the county.
