Lamp-Shaped Savoury Fritters 灯盏糕
Lamp-Shaped Savoury Fritters is featured among the local specialties of Zhejiang.

Lamp-Shaped Savoury Fritters (灯盏糕) are a fried snack associated with Wenzhou (温州). In an original China Government Procurement News (中国政府采购报) food essay, Liu Zhongmin (刘忠民) describes a street vendor making a golden, puffed fritter with a crisp outer layer and a radish, pork and egg filling.
A rice-and-soybean shell
The vendor’s batter uses soaked rice and soybeans ground into a slurry, with starch and seasoning added. Shredded radish is salted and squeezed, then seasoned with scallions, sugar and pepper; strips of pork loin are marinated separately.
Shaped in an iron ladle
Batter first coats an iron ladle and is briefly heated. The radish, pork and a raw egg go inside, followed by more batter to enclose the filling. The filled ladle is lowered into hot oil; the fritter swells and releases from it before being turned until golden. Its hollow, rounded shape recalls two old oil lamps placed together, explaining the name in this account.
