Nanxun Shuangjiao Noodles (南浔双交面) are a bowl of noodles served with two toppings, fried fish and melt-in-the-mouth pork, and a representative local staple of Nanxun (南浔) old town in Huzhou (湖州), Zhejiang.

Where it comes from

In southern China the dish laid on top of a bowl of noodles is called a jiaotou (浇头), a topping, so shuangjiao (双交) is a homophone for shuangjiao (双浇), 'double topping'. The explanation comes from Zhou Jianying (周建英), who runs a noodle shop in Nanxun old town that she describes as a century-old business, in a 2025 Xinhua report. She calls noodles with surou pork and fried fish (酥肉爆鱼面) the most characteristic of Nanxun's noodles.

Ingredients

The two toppings are baoyu (爆鱼) and surou (酥肉). Zhou points out that baoyu here is not seafood but slices of fish fried in oil. In Xinhua's words, the fried fish is crisp and well seasoned, and the pork melts in the mouth.

How it is eaten

Xinhua lists the noodles among the foods that visitors to Nanxun old town make a point of trying, and describes a queue of locals, domestic visitors and foreign tourists at Zhou's shop. A People's Daily photo-service guide to the old town names the dish, with pork and fish on one bowl, as one of Nanxun's three essential snacks beside dingsheng cakes (定胜糕) and Xun trotters (浔蹄), and suggests it for lunch.
