Pujiang Wheat Flatbread 浦江麦饼
Pujiang Wheat Flatbread is featured among the local specialties of Zhejiang.

Pujiang Wheat Flatbread (浦江麦饼) is a large, thin stuffed flatbread from Pujiang county (浦江县) in Jinhua (金华), described by CCTV's Exploration and Discovery (探索·发现) as a traditional food of the county. Pujiang households use it to welcome guests, and every family eats it on the fifteenth day of the first lunar month, where it stands for reunion and happiness: in Pujiang it takes the place that sweet dumplings (元宵) hold elsewhere at the Lantern Festival.
How it is made
Daily Business (每日商报) printed in 2013 the method used by the mother of Xiao Ai (小艾), a Pujiang native who works in Hangzhou. It starts with a dough that is neither too dry nor too soft, cut into pieces. The filling can be radish, leafy greens, pumpkin, potato or pickled mustard greens, cut into shreds and soaked in boiling water or salted, then wrung dry and mixed with firm, low-moisture tofu; some cooks add chopped pork with crumbled tofu. Each piece of dough is wrapped round a ball of filling on a board dusted with dry flour and patted flat by hand, larger for a thinner cake.
The cake is cooked by 'scalding' (烫) in a little oil rather than deep-frying: a spoonful of oil is run round the side of the pan, the flattened cake is laid against it, and it is turned several times until both sides are crisp and golden with a few scorched spots. The hard parts, Xiao Ai says, are kneading and scalding, since the aim is a cake that is thin without tearing, golden without burning, and chewy without being tough.
Flavour and texture
Every part of the Jinhua area has its own wheat cakes. Xiao Ai contrasts Yongkang's (永康) version, fried hard in oil, with Pujiang's, which is scalded in oil and stays soft to the bite, with a crisp golden outside and a savoury filling. After New Year she takes a bag of her mother's half-made cakes back to Hangzhou and scalds them in a small pan of oil over a gentle heat.
