Songyang Thin Pancakes 松阳薄饼
Songyang Thin Pancakes is featured among the local specialties of Zhejiang.

Songyang Thin Pancakes (松阳薄饼) are large, thin wheat wrappers filled with a selection of dishes in Songyang (松阳), Lishui (丽水). In a local newspaper essay, Ye Yongxuan (叶永萱) describes them as a substantial Dragon Boat Festival (端午节) midday meal.
Hand-spread wrappers
The essay describes wrappers roughly 20–30 centimetres across, prized for being thin, even and large. A maker presses a handful of elastic dough onto a flat pan, spreads it with a circular hand movement, lifts the curling edge, turns it and finishes the wrapper. The writer recalls families reserving their whitest wheat flour for festival pancakes.
A table of fillings
Diners choose from several dishes arranged across the table. The essay names amaranth, chives, dried tofu, garlic shoots, cucumber, bean sprouts, vermicelli, cabbage, shredded egg, meat, squid and potato among the fillings, alongside field-snail meat. Relatives visiting for the festival might also take some pancakes home.
