Liandu Puffed Fried Pork Strips (莲都泡精肉) are a twice-fried dish from Liandu (莲都) in Lishui (丽水). The district government’s July 2025 recipe uses lean pork with a flour-and-cornstarch coating that finishes golden, with flakes resembling fish scales.
How it is made
The pork is cut into strips one centimetre wide and three and a half centimetres long. Sugar, oyster sauce, egg and salt are mixed with the meat, which marinates for thirty minutes to an hour. The strips are coated in the flour mixture, dipped once in water and coated again.
The district recipe calls for an initial frying at 150°C followed by a second frying at 200°C. Its stated result is a crisp exterior and tender meat inside.
A dish presented by the city
Liandu Puffed Fried Pork Strips were among the foods offered at the September 2024 opening activities for the Lishui food hall in Hangzhou (杭州).
