Dangtu Braised Pork Belly Noodles 当涂大肉面
Dangtu Braised Pork Belly Noodles is featured among the local specialties of Anhui.

Dangtu Braised Pork Belly Noodles (当涂大肉面) are a noodle soup from Dangtu (当涂) county in Ma'anshan (马鞍山), Anhui, topped with big pieces of braised pork belly.
How it is made
Two things define the bowl: the pork and the soup. The pork belly is cut into large pieces and lu-braised (卤制), meaning it is simmered in a stock seasoned with soy sauce and spices, and the noodles are served in a rich, full-bodied broth.
Where it comes from
Dangtu Braised Pork Belly Noodles are a young dish. They took shape in the 1990s along the Dangtu section of National Highway 205 (205国道), the north-south trunk road that crosses the county, and at first they mainly served the truck drivers travelling that route. From the highway the noodles spread until shops across the whole county were serving them. Anhui has since put the dish on its "New Hui Cuisine, Famous Hui Chefs" (新徽菜·名徽厨) list of specialty snacks.
