Guanba Braised Beef (管坝牛肉) is a traditional halal (清真) beef dish of Quanjiao County (全椒县) in Chuzhou (滁州), Anhui, and its making is listed as municipal-level intangible cultural heritage.
How it is made
On 6 July 2025 a heritage practitioner at the Ligeng Guanba Beef company (礼庚管坝牛肉有限公司) in Quanjiao took a student team from Chuzhou City Vocational College (滁州城市职业学院) through the method step by step. Good-quality beef is selected first, then given an elaborate marinade so that the seasoning works into the meat (腌制入味), and finally braised slowly over a low fire (慢火卤制). The team came away with the craftsman's maxim that slow work makes fine work (慢工出细活).
Lu braising (卤制) means simmering meat in a seasoned, spiced liquid until it takes on the flavour.
Where it comes from
The Guanba Braised Beef making technique (管坝牛肉制作技艺) appears on Chuzhou's list of municipal-level intangible cultural heritage as a traditional handicraft of Quanjiao County.
The county government counts the beef among the quality farm and specialty products of Quanjiao's townships. At the county's Zou Taiping (走太平, 'walking for peace') festival on the sixteenth day of the first lunar month in 2026, it was sold at the farm-produce stalls, where the county described it as having a distinctive flavour (风味独特).
