Mingguang Mung Bean Cake (明光绿豆糕) is a sweet made from the mung beans of Mingguang (明光) in Chuzhou (滁州), Anhui, a bean that holds national geographical-indication certification.

Flavour and texture

At a Mingguang food market held in August 2023 under the theme "Chuzhou flavours of the 24 solar terms" (二十四节气里的滁州味道), stalls offered local specialities for tasting. Among them were mung bean cakes from Jianxi (涧溪), described as fragrant, sweet and soft yet dense, set out beside mung bean soup served as a cooling summer drink.

Where it comes from

Mingguang builds a whole production chain on one bean. From a ten-thousand-mu (about 670-hectare) mung bean planting base, the crop goes into intangible-heritage liquor brewing, new-style tea drinks and mung bean cakes made as take-home gifts (伴手礼).

The cake gained a branded version in 2026. Around the Spring Festival a highway billboard was misread online as "Nai Lü Bo" (奶绿波), and within ten days Mingguang had developed the products and opened a shop for a "Mingguang set of three" (明光三件套): Minglüye liquor (明绿液酒), Nailübo milk tea (奶绿波奶茶) and Wanglübo mung bean cake (旺绿波绿豆糕). Mingguang's mayor, Tian Haisong (田海松), named the city's geographical-indication mung bean as the core raw material of all three.
