Fuzhou Guangbing Flatbread 光饼
Fuzhou Guangbing Flatbread is featured among the local specialties of Fujian.

Guangbing is a round wheat bread with a hole at its centre. The Fujian Commerce Department's Fuzhou recipe makes a firm dough, allows it to rise and shapes it into small flattened rounds before baking them golden. The bread is then slit for a filling of cooked pork belly seasoned with red rice lees, ginger, salt, sugar and local rice wine. That filling contributes a fermented aroma and rich layered meat, while the baked bread supplies a firmer, crisp-edged contrast. The illustration includes an intact bread and filled pieces.
Flavour, texture & local variations
The same account notes other fillings, such as steamed seasoned pork and preserved vegetables, so guangbing does not always mean a red-lees pork sandwich. The plain bread's small central hole and flattened shape remain useful visual clues. Ask whether the order is plain or filled, and whether the pork has been steamed, fried or otherwise cooked after seasoning. A freshly warmed filled bread is easiest to compare with its unfilled counterpart: the crust, dense interior and aromatic meat can each be tasted separately. The sauce and pork are part of this selected variation rather than universal ingredients of every guangbing.
How it is prepared
