Zherong niu rou wan is a beef preparation whose name can be misleading if you expect large, perfectly round meatballs. The official Ningde recipe identifies the local tradition as Zherong's and instructs the cook to finely chop beef, work it with sweet-potato starch and pinch it into small pieces. Those morsels are first blanched and then cooked in clear stock. Working the mixture gives it a cohesive, springy bite, while the small size makes the broth an important part of each spoonful.

Flavour, texture & local variations

Ginger, chilli water, rice wine and vinegar give the soup its documented fresh, sour and spicy profile. The vinegar is added at the end of the official method, preserving a distinct sour edge rather than reducing it into a glaze. This makes the bowl quite different from Yongding's smooth round beef balls, even though both English names might be shortened to 'beef-ball soup'. In Zherong, look for the full local name and the small pinched pieces. The broth should be understood as seasoned clear soup rather than a heavy chilli-oil base.

How it is prepared

Beef and starch are kneaded, pinched into small morsels, blanched and finished in seasoned soup.

Ingredients to check
