Fu'an Round Baked Cakes 福安光饼
Fu'an Round Baked Cakes is featured among the local specialties of Fujian.

Fu'an Round Baked Cakes (福安光饼) are small round cakes baked in Fu'an (福安), a city in Ningde, Fujian, and described by the Ningde culture and tourism bureau as a long-established traditional food with a strong local character.
Flavour and texture
Each cake is about 8 centimetres across. The top is plump and full and the colour of copper, the base is hard and crisp, likened to iron, and the centre stays soft as cotton. The whole cake tastes slightly salty, and the bureau calls it fragrant, crisp and pleasant to eat.
How it is made
The recipe the bureau gives is short: wheat flour with refined salt, sesame and shredded spring onion, baked as small rounds.
Where it comes from
The cake is also called Jiguang cake (继光饼). By tradition it began as the dry rations of the Qi Army (戚家军), the troops of Qi Jiguang (戚继光), when they fought the Japanese pirates in Fujian and Zhejiang, and the second name carries his given name.
Fu'an's municipal government lists guangbing among the city's characteristic foods, together with Muyang roast meat (穆阳烤肉), pan-fried buns (水煎包), Muyang wontons (穆阳扁肉) and Fu'an mixed noodles (福安拌面).
