Nanchang Stir-Fried Rice Noodles 南昌炒粉
Nanchang Stir-Fried Rice Noodles is featured among the local specialties of Jiangxi.

Nanchang Stir-Fried Rice Noodles (南昌炒粉) is a Nanchang (南昌) rice-noodle dish, made by boiling the noodles, draining them and then stir-frying them in oil over an open flame.
How it is made
Soy sauce, chilli powder, greens and shredded meat are usual additions. The noodles used are Nanchang rice noodles from Jiangxi (江西). China Southern Airlines describes them as thin strands that withstand prolonged cooking; its local version adds minced spring onion, ginger and garlic, sesame oil and salted vegetables.
Local versions
China Southern Airlines lists beef, pork-intestine, egg, bean-sprout and sanxian (三鲜) versions. These are variations of the Nanchang stir-fry, rather than a single fixed topping combination. The Chinese Wikipedia account also identifies the dish as a familiar home-cooked food and snack in the Nanchang area.
