Cold Rice Noodles (冷粉) are thick rice noodles dressed cold with seasonings, a snack of Jingdezhen (景德镇) in north-eastern Jiangxi. Chinese Wikipedia names them, together with jiaozi ba (饺子粑) and jianshui ba (碱水粑), as the city's best-known snacks, and a 2025 round-up of Jiangxi rice noodles on the Hubei Daily (湖北日报) app says that almost any Jingdezhen resident asked about the city's best-known food would answer with Cold Rice Noodles.
Ingredients
Cold-dressed rice noodles are made in many places, but the Hubei Daily round-up says the noodle used in Jingdezhen is quite different: it is thick, about as thick as a chopstick at roughly 0.5 cm across. The classic bowl combines the noodles with orange peel, diced radish and diced zhacai (榨菜, preserved mustard stem), finished with chilli.
Flavour and texture
The thick noodles are tender and smooth in the mouth, and the chilli makes the bowl fiery; the round-up says one bowl is often not enough.
How it is eaten
Small eateries run by local people in the streets and lanes of Jingdezhen treat Cold Rice Noodles, jiaozi ba and jianshui ba as indispensable, and most people eat them at breakfast or as a late-night snack. In January 2025 the Jiangxi news site Dajiang Net (大江网) listed Cold Rice Noodles among the intangible-heritage snacks seen everywhere at the city's street-food market (烟火集市).
