Sour Jujube Cake (酸枣糕) is a fruit snack of Pingxiang (萍乡), Jiangxi. The Pingxiang Municipal Bureau of Culture, Radio, Television, Press, Publication and Tourism (萍乡市文化广电新闻出版旅游局) features the version from Shangli County (上栗县) and calls it a traditional folk snack of the city, its method handed down from one generation to the next.

How it is made

The Shangli cake starts with sour jujubes picked from the trees in September. The fruit is steamed until fully cooked, then mixed with sesame, salt, chilli powder and sugar. Last comes a coating of powder ground from perilla (紫苏) leaves on the outside.

Flavour and texture

The bureau sets the Shangli cake apart from the better-known Qiyunshan (齐云山) jujube cake of Ganzhou (赣州): the Pingxiang version combines chilli heat and the aroma of sesame with the sweet-sour taste of the fruit.

Where it comes from

Shangli County is part of Pingxiang. Hunan Daily (湖南日报) reported in November 2025 that Jiangxi Yangqishan Food Co. (江西杨岐山食品有限公司), a Shangli company, turns wild sour jujubes into Sour Jujube Cake, sour jujube biscuits and sour jujube strips sold as snacks. The company is certified under Xianggan Hong (湘赣红), a regional brand that Hunan and Jiangxi built together for their border region in the Luoxiao Mountains (罗霄山脉).
