Chongren Speckled Chicken (崇仁麻鸡) is a local chicken used in several dishes in Chongren (崇仁). People’s Daily Online describes it as a centrepiece for holidays and visiting relatives, with clear-simmered, white-cut, steamed and red-braised preparations.

A clear broth or an iron-pot braise

The clear-simmered version uses ginger, a little salt and spring water. Gentle cooking produces a clear golden broth and tender meat. White-cut chicken is served with a locally prepared savoury, spicy dipping sauce.

In a 2023 Fuzhou Daily interview, cook Cao Chuangguang (曹创光) describes his farmhouse iron-pot chicken. He selects four- to six-month-old Chongren birds, cuts them into large pieces and blanches them with ginger and cooking wine. Lard and rapeseed oil heat in the pot before scallion, ginger and chicken are added. Light and dark soy sauces, oyster sauce and cooking wine season the stir-fried pieces.

Reduced sauce and rice

Cao covers the chicken with boiling water and simmers it gently for half an hour, then reduces the sauce over high heat. The skin is aromatic and chewy, while the meat remains tender and juicy. Fuzhou Daily describes eating it with a bowl of hot rice.
