Jinxi Lotus-Silk Candy 金溪藕丝糖
Jinxi Lotus-Silk Candy is featured among the local specialties of Jiangxi.

Jinxi Lotus-Silk Candy (金溪藕丝糖) is a hand-pulled sugar sweet from Jinxi county (金溪县) in Fuzhou (抚州), Jiangxi, made by drawing boiled malt sugar into fine white threads and wrapping them around a filling of sesame, soybean flour and osmanthus.
How it is made
Malt sugar is boiled down into a sugar base and taken out of the pan, pulled into threads of sugar, and then wrapped around a filling of sesame, soybean flour and osmanthus. China Today, in a 2023 feature with Xinhua photographs, notes that the steps look simple but test the maker's hands: if the sugar is too hot or too cold, it will not pull into the fluffy, fine strands, white as silk, that the finished candy needs.
Where it comes from
For many people in Jinxi the candy is a taste of the New Year. As the New Year approaches, Peng Kuanguang (彭宽光), who has made it for more than forty years, works to finish batches of hand-made candy to sell as New Year goods, and he has passed the craft on to his daughter, Peng Xihua (彭细华).
The making technique is item VIII-2, under traditional handicrafts, on Jinxi county's first list of county-level intangible cultural heritage, dated 6 February 2007. The county government also names the candy alongside Jinxi honey pears among the local specialty foods on sale at its 2023 honey-pear season night event.
