Guangfeng Stir-Fried Rice Noodles (广丰炒粉) are fresh rice noodles stir-fried to order in Guangfeng (广丰), a district of Shangrao in Jiangxi, where the district government calls them springy, smooth and richly savoury.
How it is made
The dish starts with fresh rice noodles rather than dried ones (粉干). A commentary on Dajiang Net (大江网), the Jiangxi provincial news site, says the fresh noodles are springier and fry up smoother and chewier, but keep only briefly and spoil easily on long journeys. That is one reason the dish has stayed around Guangfeng, reaching Shangrao and neighbouring places such as Yushan (玉山) and Xinzhou (信州) but not much further.
Each plate is cooked on the spot, and the same commentary stresses how much depends on the cook: heat, oil temperature and the timing of the seasoning all need close control, and the same ingredients taste different in different hands. The commentary describes the finished taste as leaning fresh, hot, salty and savoury, which it thinks may seem too strong in other parts of China. At the district's 2026 noodle carnival, the Guangfeng government described woks tossing over open flames and fierce heat drawing out the aroma of noodles and toppings together.
Where it comes from
The Shangrao municipal commerce bureau quotes a local boast, "天下米粉出江西,江西炒粉看广丰": the world's rice noodles come from Jiangxi, and for Jiangxi's fried noodles, look to Guangfeng. It calls the dish a source of local pride and a taste Guangfeng people living elsewhere remember. Dajiang Net adds a saying, "一日不吃粉,走路都不稳" (skip your noodles for a day and you walk unsteadily), and calls the dish a Guangfeng breakfast favourite.
The district now holds public events around it. At a Guangfeng Stir-Fried Rice Noodles festival final in December 2023, 25 cooks from the district's townships and streets competed, and in February 2026 the district opened a carnival under the theme "一城一粉一味,一潮一宴一会", which begins "one city, one noodle, one taste".
