Qingdao Pan-Fried Dumplings 青岛锅贴
Qingdao Pan-Fried Dumplings is featured among the local specialties of Shandong.

Qingdao Pan-Fried Dumplings (青岛锅贴) are crescent-shaped dumplings fried in a flat pan until their bases turn golden, a dish Qingdao (青岛) people eat at breakfast, lunch or dinner. Qingdao Daily's Guanhai News (观海新闻) calls the Cangkou dumpling shop (沧口锅贴铺) the head shop of Qingdao guotie; it now trades as Qingdao Guotie Co. (青岛锅贴有限公司) in Licang District (李沧区).
How it is made
At the Cangkou shop each dumpling is wrapped roughly half filling and half dough, which gives it a crescent shape. A flat pan is brushed with oil and the dumplings are set out in neat rows. Cooks then sprinkle water evenly into the gaps between them so it runs down to the bottom of the pan, cover the pan and fry for seven or eight minutes. Some shops lift them out with a spatula five or six at a time, still joined together.
Flavour and texture
The bases come out golden while the edges stay slightly soft. Qingdao Daily's Guanhai News describes the Cangkou dumplings as full of soupy juice and oil, and People's Daily Online calls them thin-skinned and generously filled, tender, savoury and golden.
Ingredients
Guanhai News counts more than fifty varieties of Qingdao guotie in four series, from 'three-treasure' dumplings filled with shark fin, sea cucumber and abalone to the everyday 'three-fresh' (三鲜) filling. A whole banquet built around the dumplings has also been put on. Other Qingdao shops pair the dumplings with local seafood, such as clams. At Shifeng Qingdao Old Guotie (世峰青岛老锅贴), opposite May Fourth Square (五四广场) in Shinan District (市南区), a Bandao Metropolis Daily reporter found none of the usual pork-filled dumplings but a range of seafood fillings: one version wraps a whole squid with chives and meat so that the tail sticks out, and comes out as long as an adult's palm.
Where it comes from
Qingdao Guotie Co. has registered 'Qingdao Guotie' as its trademark and holds the titles 'Chinese Famous Snack' (中华名小吃) and 'Shandong Famous Snack'. In 2020 its making technique was listed as intangible cultural heritage of Licang District.
