Yellow River Estuary Hairy Crabs 黄河口大闸蟹
Yellow River Estuary Hairy Crabs is featured among the local specialties of Shandong.

Yellow River Estuary Hairy Crabs (黄河口大闸蟹) come from Dongying (东营), where the Yellow River enters the Bohai Sea. Kenli District (垦利区) is the main production area, with crab farming developed on the estuary’s saline-alkali land.
Flavour and texture
A September 2024 feature from Dongying’s marine development and fisheries bureau describes blue-green backs, white bellies, yellow hair and golden claws. It quotes local grower Li Jianhui (李建辉), who links the crabs’ fresh sweetness to mildly saline Yellow River water, at about three parts per thousand.
Where it comes from
The local farming system combines planted waterweed, introduced snails, low-density stocking and mixed-species culture. The bureau describes ponds supplied with Yellow River water and planted with aquatic vegetation, including hydrilla.
Its account gives a stocking level of about 1,500 juvenile crabs per mu and an average mature size of 3.5 liang. These figures describe the cultivation programme reported in 2024.
