Jingzhi Quick-Fried Shredded Pork (景芝小炒) comes from Jingzhi Town (景芝镇) in Anqiu (安丘). CCTV’s Xiangcun Da Shijie (乡村大世界) identifies four versions, pairing pork with coriander, Chinese chives, garlic flower stems or gongcai (贡菜).

Pork and coriander stems

The programme’s coriander version uses 200 grams of pork tenderloin and 100 grams of coriander stems. The coriander leaves are removed, and the stems are cut into three-centimetre lengths. The pork is cut into fine strips, with shredded ginger and chopped scallion prepared separately.

A brief boil before the wok

The pork first goes into a small quantity of boiling water with a little dark soy sauce for colour, then is lifted out and drained. Ginger and scallion go into hot oil in a separate pan, followed quickly by the pork and coriander stems. After a brief stir-fry, a little oyster sauce may be added before serving. CCTV describes tender pork and crisp coriander, with a pronounced aroma.
