Liaocheng Iron Rooster Smoked Chicken (聊城铁公鸡) is the Wei family’s smoked chicken, made by braising selected plump birds and then smoking them with sawdust. Its chestnut-red skin shrinks and splits, exposing meat on the breast and legs.

Flavour and texture

Dongchangfu’s (东昌府) culture and tourism bureau describes a savoury, aromatic chicken with a firm, chewy texture and a lingering flavour. The distinctive appearance comes from the contracted skin and the exposed meat, as well as the chestnut colour. The bureau lists it as an accompaniment to both alcoholic drinks and tea.

Where it comes from

The bureau dates the recipe to Wei Yongtai (魏永泰) in 1810, the fifteenth year of the Qing Jiaqing reign. It attributes the nickname “Liaocheng Iron Rooster” to the writer Lao She (老舍).

The Wei-family smoked-chicken craft entered Shandong’s (山东) second provincial intangible cultural heritage list in 2009.
