Qingfeng Braised Pig Trotters 清丰猪蹄
Qingfeng Braised Pig Trotters is featured among the local specialties of Henan.

Qingfeng Braised Pig Trotters (清丰猪蹄) are represented by Liji (李记) in Qingfeng County (清丰县), Puyang (濮阳), where sweet wheat paste gives the trotters their rich sauce flavour. The Liji business dates to the previous generation, and its braising recipe has since been refined.
How it is made
Preparation begins with painstaking cleaning: each trotter is scraped by hand, fine hairs in the crevices are singed away, and the trotters are washed together in a machine. Sweet wheat paste that has been sun-aged for five months is stirred into the old braising stock, followed by the trotters and a spice bag containing more than ten seasonings.
A large rack presses the trotters down in the pot. They are braised for two hours, then left to cook gently for another hour before being lifted out.
Flavour and texture
The wheat paste contributes both fragrance and an even colour. Da Xiang News (大象新闻) describes the finished meat as soft, sticky and evenly seasoned, with a pronounced fermented-sauce aroma. While hot, the flesh comes away from the bones with very little effort.
