How it is made
The trotters are stewed in an old master stock (老汤) that has been handed down from generation to generation, seasoned with more than thirty spices. Huanqiu credits this stock and the long spice list with the dish's flavour.
Flavour and texture
Wangluo Red-Braised Pig Trotters come out a glossy soy-red. The skin and meat are soft and sticky, the flavour is rich and fragrant, and although the trotters are fatty they are not greasy.
Where it comes from
Local tradition traces the dish to the Spring and Autumn period, more than two thousand years ago, and presents it as a recipe carried down ever since. Wangluo has built a festival around it: the first trotter promotion season was held in 2024, and on 20 September 2025 the town opened the second, with a trotter-eating contest, a molten-iron fireworks show (打铁花) and a street of food stalls among the events.
