Plain-Steamed Crayfish (清蒸小龙虾) is crayfish steamed plainly in the shell and eaten with a dipping sauce. It is one of the crayfish dishes claimed by Qianjiang (潜江), the Hubei city the Wuhan Bureau of Commerce calls China's crayfish hometown. A report reposted by the Hubei Department of Agriculture and Rural Affairs names steamed crayfish among 128 crayfish dishes the city has introduced, next to braised crayfish (油焖大虾), the Qianjiang method that became the classic Hubei crayfish flavour.
How it is made
In Wuhan, according to a crayfish guide from the Wuhan Culture and Tourism Bureau, only top-grade crayfish are steamed: they are cooked over water so that the natural taste stays intact. The cook's real work goes into the small dish of dipping sauce. Many Wuhan crayfish cooks queued at the Liangliang Steamed Crayfish (靓靓蒸虾) restaurant to take its sauce home and study it; some tasters picked out aged salted-plum water in it, but nobody has worked out the recipe.
Flavour and texture
Steamed crayfish is not as rich and deeply coloured as the braised version; its appeal is simplicity and plump, sweet, fresh meat. At Xiahuang (虾皇), a crayfish chain from Qianjiang with restaurants in Wuhan, the Wuhan Bureau of Commerce notes that steaming leaves the shell thin and crisp; cracked open, the shell shows a trace of red membrane over springy meat, and diners pull the crayfish apart by hand and dip it.
Where it comes from
Qianjiang has been named a 'hometown of crayfish cuisine' (中国小龙虾美食之乡) by the China Cuisine Association, and Xinhua reported steamed crayfish among the dishes served at the city's 2024 crayfish food week, held at the Qianjiang Ecological Crayfish City (潜江生态龙虾城) with braised crayfish, garlic crayfish and lemon-marinated crayfish. Xiahuang, founded in 2009, has built its own rice-paddy crayfish farms.
