Hengdong Crisp Stir-Fried Pork Stomach 衡东脆肚
Hengdong Crisp Stir-Fried Pork Stomach is featured among the local specialties of Hunan.

Hengdong Crisp Stir-Fried Pork Stomach (衡东脆肚) is a stomach dish from Hengdong County (衡东县) in Hengyang (衡阳), Hunan, known locally as Shiwan crisp stomach (石湾脆肚) and cooked with the county's yellow tribute chilli (黄贡椒).
How it is made
A local rhyme quoted by Rednet Moment and the Hengdong County Media Centre sums up the method: raw stomach, braised with camellia oil and yellow chilli ("生肚茶油黄椒焖"). The same feature calls the yellow tribute chilli the soul of Hengdong country cooking.
Xin Hunan describes the chilli grown in Sanzhang (三樟) as thin-skinned and thick-fleshed, bright in colour, and sweet, hot, fragrant and crisp.
Flavour and texture
Rednet Moment and the Hengdong County Media Centre sum up the finished dish as fragrant, hot and crisp ("香辣脆爽"). Its Chinese nickname is "三湘惊雷", roughly "a thunderclap over Hunan".
Where it comes from
The dish is named after Shiwan (石湾) and is widely cooked in Shiwan, Sanzhang, Daqiao (大桥) and Bailian (白莲), where it is ordinary home cooking. In the Hunan round of the 2008 national cooking competition, Hengdong's Shiwan crisp stomach won a gold award, and it was entered on a list of a hundred classic Hunan dishes. Hengdong itself is described as the only county in Hunan to hold the official title of famous county for country cooking ("土菜名县").
