Fengjie Hand-Torn Noodles (奉节搭搭面), known locally as dada noodles, are a noodle dish from Fengjie County (奉节县), Chongqing. Hualong Net (华龙网) recommends them first when it describes breakfast in the old part of town: hand-made noodles with plenty of chew, coated in a thick egg-drop soup (蛋花汤) with a fresh, mellow taste.

Where it comes from

The making of dada noodles is a municipal intangible cultural heritage item in Chongqing, listed as the Fengjie dada noodle making technique (奉节搭搭面制作技艺) under Chongqing noodle making technique (重庆小面制作技艺), item VIII-176, for Fengjie County. In 2022 the Chongqing Municipal Commission of Culture and Tourism Development named Wang Shengju (王胜菊) a representative inheritor of the craft in its sixth batch of municipal inheritors, and she is still on Fengjie's list of municipal inheritors in the county's 2025 assessment.

The Fengjie county government includes Old Town dada noodles (老城搭搭面) in its local food section. Its draft culture and tourism plan for 2026 to 2030 names dada noodles, with Guzi chicken (盬子鸡) and orange-scented rabbit (橙香兔丁), among the local foods for which it intends to set local standards on ingredients and finished quality.
