Yaxi Cold Starch Jelly (鸭溪凉粉) is the liangfen (凉粉), a cold jelly snack, of Yaxi Town (鸭溪镇) in Zunyi (遵义), Guizhou. Zunyi Net, the city's news site, calls it the town's most characteristic snack, and its shop signs appear by the road before you even reach Yaxi.
Where it comes from
Yaxi is counted among the "four famous towns of northern Guizhou" (黔北四大名镇). In 2018 the China Hotel Association (中国饭店协会) gave it the title "China's Home of Liangfen" (中国凉粉之乡). Zunyi Net counts more than 200 businesses selling the jelly in the town, and one shop alone employs more than ten people. Town officials have spoken of plans for a Yaxi liangfen street and for local snack-processing firms.
At the Fan family shop (范家凉粉店) the owner learned to make liangfen from her mother-in-law, who was already making and selling it in the 1960s. The shop moved from Majia Lane (马家巷子) to Liangmao Garden (粮贸花园) in 2012; with better roads and more passing traffic, the owner says, people now get out of their cars, buy a bowl and drive on.
The Zunyi city government portal, in a route written by the Guizhou provincial culture and tourism department, lists Yaxi Cold Starch Jelly among the things to buy around the Goba (苟坝) red-tourism area in Bozhou District (播州区).
How it is eaten
At a shop by the Yaxi toll-gate exit, drivers leave the expressway just to try a bowl. A diner from Tongren (铜仁) quoted the saying that coming to Yaxi without eating Yaxi liangfen is a wasted trip, and described the texture as smooth and silky. The jelly is also sold boxed, with the liangfen and its condiments packed together, as a gift to take when visiting friends and relatives.
