Old Kunming Mutton Soup Hot Pot (老昆明羊汤锅) is Kunming's stewed mutton pot, also called the whole-goat soup pot (全羊汤锅). Wenlv Toutiao (文旅头条), a culture-and-tourism news site run by the Yunnan Daily Press Group, calls it the Kunming people's own "mutton hot pot".
How it is made
The main ingredient is mutton and the method is stewing. Different breeds can be used, such as skin-on mutton from Dongchuan (东川) or snow-mountain goat from Luquan (禄劝). The meat is stewed until soft and rich, so that it comes away from the bone easily while still clinging to it. Side ingredients and seasonings go into the pot as well, among them Chinese yam, goji berries and fresh ginger.
How it is eaten
It is a winter dish. As the weather turns cold, Kunming people call their friends together and drink bowls of the hot mutton broth.

Wenlv Toutiao reports that the dish was named one of Yunnan's ten classic dishes in the China Cuisine Association's "Chinese dishes" selection, and one of Kunming's "top ten famous dishes" by the Yunnan catering and food industry association. Chinese Wikipedia's article on Yunnan cuisine (滇菜) lists Kunming mutton soup pot (昆明羊汤锅) among its meat dishes.
