Zhenxiong Pig Trotters in Sour Soup (镇雄酸汤猪脚) are pig's trotters simmered in a sour red-bean broth, a well-known dish of Zhenxiong County (镇雄县) in Zhaotong (昭通), Yunnan; the county borders Sichuan and Guizhou. Reporting a 2019 proposal to the county's political consultative conference, Yunnan CPPCC News called the dish long-established, distinctive in flavour and a calling card of Zhenxiong's local food.
How it is made
Chuanguan News (川观新闻) describes the method: carefully chosen trotter meat is first braised in a seasoned stock, then simmered together with a sour red-bean soup (红豆酸汤). Side ingredients such as crispy fried pork (酥肉), tomato and Chinese cabbage go into the pot. The result is rich without being greasy, and sour and hot.
Where it comes from
An essay on Zhaotong News Net (昭通新闻网), the Zhaotong city news site, about Tuoni (妥泥) village in Zhenxiong's Dawan (大湾) town, counts sour-soup trotters among the many dishes Zhenxiong people make with pickled greens (酸菜). It quotes the local saying "三天不吃酸,走路打蹿蹿" (go three days without something sour and you walk unsteadily), and lists the trotters alongside pickled-greens red-bean soup, pickled-greens tofu-pudding soup and cold dressed pickled greens.
The 2019 proposal asked the county to design and register a trademark for a Zhenxiong sour-soup trotters brand, and to build up local farming of its ingredients: native pigs, greens, garlic, Sichuan pepper and rapeseed.
