Jingdong Fire-Roasted Pork (景东火烧猪) is a signature dish of the Yi (彝族) people of Jingdong County (景东县) in Pu'er (普洱), Yunnan. Wenlv Toutiao (文旅头条), a news site of the Yunnan Daily Press Group, includes it among eight Pu'er dishes in a 2021 food feature.

How it is made

In the traditional method the pork is cut into chunks and seasoned with soy sauce, vinegar and chillies so that the flavour soaks in. Wenlv Toutiao describes this method as keeping the meat's own fresh taste. Local cooks usually take the meat only to about eight-tenths done, which is said to keep it rich without being greasy and to give it a fresh aroma.

Flavour and texture

The skin comes out charred and the meat tender. The flesh is loose and soft but substantial in the mouth, with a rich aroma.
