Yongde Pea Starch Jelly (永德豌豆粉) is a chilled pea-flour snack from Yongde (永德), cut into strips or blocks and dressed with sour, spicy seasonings. A Yunnan provincial Taiwan Affairs Office (云南省人民政府台湾事务办公室) food account describes its fine, tender texture.
From slurry to set jelly
Pea flour is mixed with water, filtered and cooked while being stirred. The cooked mixture is poured into a basin and left to cool before being cut. This produces the liangfen (凉粉) form described in the Yongde account.
Different vinegars, different flavours
The pieces are dressed with vinegar, sesame oil, garlic juice, coriander and chilli. The account distinguishes aged vinegar, vinegar infused with wild sour fruit, and tamarind vinegar, each giving a different flavour. The 2009 account also describes roadside stalls and small town and village shops selling the snack as a midday meal for travellers and market-goers.
