Oil-Drizzled Flatbread (狗浇尿油饼) is a thin wheat pancake fried in rapeseed oil in Qinghai (青海). It is golden, fragrant and soft, with a sweetness noted in both Haibei (海北) and Guide County (贵德县) government descriptions.

How it is made

The wheat dough is kneaded and rolled out, then scattered with xiangdou powder (香豆粉) and spread with rapeseed oil. The sheet is rolled into a long cylinder, coiled into a screw shape, cut into short sections and pressed thin. As the pancake cooks, more oil is poured around the edge of the pan in repeated small additions.

Where it comes from

Guide County offers one explanation for the unusual nickname: the repeated pouring of oil reminded people of a dog urinating. At the 2010 World Expo, the pancake represented Qinghai under the name Qinghai ganlan bing (青海甘蓝饼), chosen because the original nickname was considered inelegant.
