Yongqing Huji Braised Chicken (永清胡记烧鸡) is a Langfang (廊坊) specialty made from locally raised, free-ranging young cockerels. Beijing Tourism traces the business to the late Qing period and describes four generations of continuity. Its golden, glossy surface and tender meat come after frying and a long, gentle cook in seasoned stock.

Honey, frying and stock

The chicken is coloured with honey and fried before it enters the old stock. Beijing Tourism specifies eighteen seasonings in that cooking liquid and three to four hours over low heat.

The finished bird combines the savour of chicken with a substantial spice aroma. Beijing Tourism describes it as food for a main dish or a snack, as well as something given as a present.
