How it is made

Rice is simmered with ample water or stock until the grains soften and partly break down. Macau shops offer plain congee or add meat, fish, shellfish and other ingredients.

The base is silky and mild, with individual additions supplying salt, aroma and firmer bites. Thickness ranges from flowing to spoon-coating.

Congee is a widespread Cantonese breakfast and supper food, including Macau, rather than a dish exclusive to the city.

Ingredients & dietary needs

Rice is simmered into a soft porridge, but a restaurant bowl can contain fish, pork, poultry, preserved egg, seafood, stock and garnishes. A pale or smooth appearance does not identify the base. Ask about the cooking liquid as well as the ingredients named after the word congee.

How to order Congee

Choose the topping and ask whether the base uses meat stock before ordering a plain-looking bowl. Ask whether a plain bowl is cooked separately or shares a meat-based stock. If ordering preserved egg and pork congee, keep both ingredients in mind rather than treating the egg as the only addition. Fresh garnish can often be adjusted more easily than a stock that was prepared earlier.

How to eat it & plan a meal

Choose a topping and bowl size before adding fried dough or other sides. Stir to distribute the ingredients and cool a spoonful before eating; thick porridge holds heat. A small bowl can be breakfast, while a richly filled large bowl may be a complete meal.

Names & local variations

粥 is a broad food category found in Macao and many other regions. Cantonese-style smooth congee, grainier porridges and seafood-filled preparations have different textures. This entry should be read as an introduction to the format, not a claim that plain rice porridge originated exclusively in Macao.

Egg noodles are cooked, drained and tossed with a light seasoning before dried shrimp roe is scattered over them. A small bowl of broth may be served separately. The noodles are fine and springy, with a concentrated, salty marine flavor from the roe. Their relatively dry surface helps the roe cling.
