Four Herbs Soup with Pork (四神汤) is served in Taipei (台北) with pork intestines and Job’s tears. The city tourism bureau’s food brochure describes two local bowls, both accompanied by rice wine, at Atong Abao (阿桐阿宝) and Mazu Gongkou (妈祖宫口).

A herbal-fragrant bowl

Atong Abao’s version on Minsheng West Road (民生西路) contains generous portions of Job’s tears and pork intestines, with a pronounced herbal fragrance. Once the soup is on the table, the shop’s specially prepared rice wine can be added. The same establishment also serves rice dumplings and meat buns.

The Cisheng Temple version

Mazu Gongkou is among the food stalls in front of Cisheng Temple (慈圣宫) in Dadaocheng (大稻埕). Its bowl pairs springy small intestines with soft Job’s tears, a combination described as increasingly fragrant when chewed. A little rice wine adds flavour to this serving.
