Longgang Flat Rice Noodle Soup (龙冈米干) is a Yunnan-style dish of flat rice noodles in bone broth, a common dish in the Longgang (龙冈) area of Taoyuan (桃园) around Zhongzhen Market (忠贞市场). Jiao Tong (焦桐), speaking at the launch of his book on Longgang's Yunnan food, traced migan to the guerrillas of the Yunnan–Burma border, and most residents of neighbouring Zhongzhen New Village (忠贞新村), set up in 1954, came from Yunnan (云南) and the Thai–Burmese borderlands.

How it is made

At the Flag House (国旗屋) shop in Zhongzhen Market, cooked rice is blended with raw rice and ground to a batter, which is spread on round trays and steamed. The steamed sheets are then hung on bamboo poles. Some migan shops pass off Hakka flat rice noodles (粄条) as migan, but the owner, Zhang Laowang (张老旺), insists on making the noodles by hand every day.

Jiao Tong describes the migan brought by the Yunnan–Burma guerrillas as made from good rice with a glutinous quality, lightly fermented and ground with water into a batter, strained and steamed in shallow trays, then cooled and cut into translucent white strips with a chew like flat rice noodles.

Ingredients

Jiao Tong notes that the Longgang version is served in a broth simmered from bones and topped with a fried egg, sliced pork and pork liver. At the Flag House, where the broth was worked out by Zhang's wife as the taste of her Golden Triangle home, it also gets a minced-pork topping: garlic, ginger and shallots are fried until fragrant, the pork is stir-fried with them until browned and dry, and Yunnan-style bean paste goes in last.

Where it comes from

Restaurants in Longgang cook mainly Yunnan, Thai and Burmese food, and rice noodles, migan and chilli-numbing chicken are among the common dishes. In April 2011 the Taoyuan county government held the first Longgang Migan Festival, centred on the street in front of Zhongzhen Market. The city government carried it on after Taoyuan was upgraded to a city, and by 2020 the festival had been held ten times.
